Sometimes, the simplest meals are the ones that bring the most comfort. When you're craving something warm, savory, and deeply satisfying, this bowl of Korean soy-braised pork rice with scrambled eggs and a touch of melting butter is the perfect choice. It’s humble, easy to make, and feels like a cozy hug in food form.
Ingredients (Serves 1)
- 1 bowl of warm rice (about 200g)
- 1 can of Korean soy-braised pork (90g – often labeled jangjorim)
- 1 egg
- 1 small knob of butter (about 10g)
- 1 tbsp cooking oil
- Roasted sesame seeds (optional)
Instructions
1. Make the scrambled egg
Heat oil in a nonstick pan over medium-low heat. Beat the egg in a bowl, then pour it into the pan. Gently stir with chopsticks or a spatula until soft and slightly runny—think creamy, not dry.
2. Assemble the rice bowl
Scoop the warm rice into a serving bowl. Top with the scrambled eggs and soy-braised pork (including some of the braising liquid, if you'd like). Place a small piece of butter on top, and sprinkle with sesame seeds for a nutty finish.
Tips & Variations
- Deeper flavor → Add 1 tablespoon of the braising liquid from the pork and mix it into the rice.
- Want a spicy kick? → A spoonful of gochujang (Korean chili paste) blends beautifully with the richness of the butter.
- Extra protein → Feel free to add an extra egg or top with a fried egg instead.
This dish is a beautiful example of how pantry staples can come together for something unexpectedly delicious. It’s the kind of meal you’ll want to make again and again—no fancy ingredients, just simple comfort.
