As someone who’s been a fan of the original Paldo Bibimmen for years, I was excited to test out both preparation methods and see how this upgraded version holds up.

Despite the similar name, Paldo Bibimmen II feels like a totally different product. Here’s what stood out: 

  • Thicker Noodles: The noodles are noticeably thicker, offering a chewier, more satisfying texture.
  • Added Veggie Packet: A new dried vegetable packet gives the dish more substance and texture variety. 
  • Spicier Sauce: This was the biggest change. The sauce has a stronger black pepper kick, making it significantly spicier than the original version.

Trying It Cold

I started with the classic cold preparation — boil the noodles for about 5 minutes and 30 seconds, rinse under cold water, and mix with the sauce. I added a hard-boiled egg, lettuce, and perilla leaves for a refreshing summer meal. 

The spice hits fast and hard, though! The black pepper aroma is strong, and the heat lingers. If you're sensitive to spice, you might want to tone it down with boiled egg, cheese, or even a bit of yogurt. But if you enjoy intense flavors, you'll love the punch it delivers.

Next, I gave the hot version a try. To make it warm, cook the noodles and veggie packet for 4 minutes, drain completely, then stir in the sauce while the noodles are still hot.

I added a slice of cheese and mixed it in until it melted. The result? A much creamier and smoother flavor with the heat mellowed out. I also topped it with some shredded green onions, which made it even more delicious. Honestly, this combo was a game-changer — I’d highly recommend it.
