Apple Potato Salad (Serves 1)
Ingredients
- 1/3 apple
- 1 medium potato
- 1/4 tsp salt
- A pinch of dried parsley (for garnish)
Instructions
1. Thinly slice the apple and potato into half-moon shapes.
2. Bring a pot of water to a boil, add 1/4 tsp of salt, and blanch the potato slices for 1 minute.
3. Drain and rinse the potatoes under cold water, then let them cool completely.
4. Plate the apple and potato slices neatly on a serving dish.
Tofu Sesame Dressing (Serves 1)
Ingredients
- 100g tofu
- 50ml milk (or a plant-based alternative)
- 2 tbsp Roasted sesame seeds
- 1 tbsp oligosaccharide syrup (or honey/maple syrup)
- 1/4 tsp salt
