Looking for a quick and flavorful side dish? Try this Korean-style Spicy Braised Eggs, or Dalgyal Bokkeum! Hard-boiled eggs are simmered in a sweet and spicy gochujang-based sauce, making them perfect as a banchan (side dish) or even a protein-rich snack. It’s incredibly easy to make and bursting with flavor!
Ingredients (Serves 2–3)
- 8 eggs
- 1 tbsp gochujang (Korean red pepper paste)
- 1 tbsp gochugaru (Korean red pepper flakes)
- 1 tbsp sugar
- 1/2 tbsp minced garlic
- 200ml water
- 1 tbsp vinegar (for boiling eggs)
- 1 tbsp salt (for boiling eggs)
- A pinch of sesame seeds (for garnish)
Instructions
1. Boil the Eggs
Place the eggs in a pot and cover with water. Add 1 tablespoon of vinegar and 1 tablespoon of salt. Boil for 10 minutes. Transfer the eggs to cold water, cool completely, then peel.
2. Make the Sauce
In a bowl, mix together gochujang, gochugaru, sugar, minced garlic, and 200ml of water until well combined.
3. Braise the Eggs
Pour the sauce into a pot and bring to a boil. Add the peeled eggs and simmer over medium heat for 10–15 minutes, turning occasionally so they’re evenly coated in the sauce.
