Ingredients (Makes 4–5 cupcakes, about 6 cm / 2.4 inches)
- 2 eggs
- A pinch of salt
- 60 g sugar
- 80 g milk
- 140 g cake flour
- 4 g baking powder
- 40 g butter
- 2 drops vanilla extract
- Powdered sugar, for dusting
Instructions
1. In a mixing bowl, whisk the eggs with a pinch of salt. Add sugar and milk, and stir until the sugar dissolves.
2. Mix in the cake flour, baking powder, and melted butter. Stir until smooth, with no lumps. Add 2 drops of vanilla extract for aroma.
3. Line cupcake cups with parchment paper and fill them halfway with batter. (Don’t overfill, as the batter will rise.)
4. Microwave for about 2 minutes. Check doneness by inserting a toothpick—if it comes out with wet batter, cook for another 30 seconds.
5. Dust with powdered sugar before serving.
