Chocolate Brownie Cupcake


Ingredients (makes about 5 cupcakes)

  • 120g cake flour
  • 150g sugar
  • 2 tbsp cocoa powder
  • 4g baking powder
  • 2 tbsp grape seed oil (or neutral oil)
  • 120ml milk
  • A handful of chocolate chunks or chips


Instructions

1. In a mixing bowl, combine cake flour, sugar, cocoa powder, and baking powder. Mix well until evenly blended.

2. Add grape seed oil and milk to the bowl. Stir until the mixture is smooth and lump-free. 

Make the batter

3. Line a muffin tin with paper cups. Fill each one halfway with the batter, then top with chocolate chunks. 

Fill the cupcake molds

4. Microwave for about 2 minutes. 

Tip: Insert a toothpick into the center. If it comes out with wet batter, microwave for an additional 30–60 seconds.
