When the summer heat dulls your appetite, it’s time for a bowl of Spicy Kimchi Bibim Noodles — a refreshing Korean cold noodle dish that’s both tangy and flavorful. Ingredients (Serves 1)

- 100g somyeon (thin wheat noodles)
- 200ml cold naengmyeon broth (store-bought)
- 60g kimchi (preferably well-fermented)
- 1/4 cucumber
- 1/2 boiled egg
Bibim Sauce(Spicy-Sweet Seasoning)
- 1 tbsp sugar
- 1.5 tbsp soy sauce
- 1 tbsp gochujang (Korean red chili paste)
- 1/2 tbsp sesame oil
- 1/2 tbsp crushed toasted sesame seeds
Instructions
1. In a bowl, mix all the sauce ingredients.
2. Julienne the cucumber and finely chop the kimchi. Cut the boiled egg in half.
3. Boil the somyeon for about 5 minutes. Rinse in cold water several times to remove excess starch and cool completely. Drain thoroughly.
4. In a large mixing bowl, toss the noodles with the prepared sauce and chopped kimchi until evenly coated.
5. Plate the noodles and top with cucumber slices and half of the boiled egg. Pour chilled naengmyeon broth around the noodles.
Tip
For extra chill, freeze the broth slightly beforehand — a few floating ice crystals will make your meal even more refreshing.
