Stir-Fried Pork Belly and Bean Sprout Rice Bowl

  • 200g thinly sliced pork belly 
  • 100g mung bean sprouts
  • 50g green onion
  • 1 Cheongyang chili pepper (or any spicy chili)
  • 2 bowls of cooked rice
  • A little cooking oil 
  • 1/2 tbsp sesame oil
  • Sesame seeds (for garnish)

Instructions

1. Make the sauce 

In a small bowl, mix all sauce ingredients until well combined.

2. Marinate the pork 

Add the sliced pork belly to the sauce and mix well. Let it marinate for 10 minutes.

3. Prepare the vegetables

Thinly slice the green onion. Remove the seeds from the chili pepper and slice thinly.

Rinse the bean sprouts under cold water and drain.

4. Stir-fry the pork

Heat a pan over low heat with a little cooking oil. Sauté the green onion for 2 minutes.

Increase to medium heat, add the marinated pork, and stir-fry for about 5 minutes until cooked through.

5. Add the bean sprouts and chili

Toss in the chili pepper and bean sprouts. Stir-fry for another 2 minutes until the sprouts are slightly wilted.

6. Serve

Scoop rice into bowls, top with the pork and sprout mixture. Drizzle with sesame oil and garnish with sesame seeds.
